Nahikian-Nelms, Marcia : Southeast Missouri State University
Marcia Nahikian Nelms is currently an associate professor and director of the Didactic Program in Dietetics at Southeast Missouri State University. She comes to her academic career after practicing as a clinical dietitian and public health nutritionist for over 23 years. Her clinical practice specialties center around hematology-oncology, nutrition support, bone marrow transplant, HIV and AIDS. Dr. Nahikian-Nelms continues to consult in these practice areas as she guides new practitioners into the profession of dietetics.
Anderson, Sara Long : Southern Illinois University Carbondale
Dr. Sara Long Anderson is an Associate Professor in the Department of Animal Science, Food and Nutrition at Southern Illinois University-Carbondale, and is the Director of the Didactic Program in Dietetics. Her areas of specialty are medical nutrition therapy, nutrition education, and food and nutrition assessment. She received her Ph.D. from Southern Illinois University- Carbondale and is also a licensed dietician in Illinois. Sara Anderson is the author of several other texts, including Wadsworth's PERSONAL NUTRITION, Fifth Edition (2004), co-authored with Marie A. Boyle.
